Chef Oli Brandon, who shares his cooking videos on TikTok under the username @theptchef, has revealed how he makes “the best roast potatoes”. The chef revealed that the key to potatoes that are crispy on the outside and fluffy on the inside is to add a teaspoon of baking soda while cooking.

In a video posted on his TikTok page, the chef bit into one of his freshly made potatoes. He described the satisfying crunch as: “The sound of the best fried potatoes you’ve ever had.”

The recipe has been a hit on social media, garnering 536.9k likes so far and being shared 103.1k times.

In a step-by-step guide, Oli explained: “Place a teaspoon of baking soda and salt in boiling water and cook the potatoes until fork tender but not falling apart.”

When added at this stage, baking soda breaks down a starch in potatoes called pectin and draws it to the surface. This helps to create a crispy surface and helps the potatoes to become a lovely shade of golden brown.

“Make sure you spread the oil all over the potatoes, add salt and pepper and roast them at 180C for 20 minutes,” he said.
